FOODSERVICE FORUM - 2008:

A comprehensive foodservice forum was held in Launceston, Tasmania in August 2008 with a great response from all areas of the inustry including distributors, manufacturers, healthcare and more guests from other parts of the industry including chefs. A back of house tour was also possible with Chef, of the Country Club Tasmania.

MARY WHELAN
Mary is a highly respected foodservice consultant who works across many sectors including health care, hospitals and institutions, catering operations and food sectors. Formerly Chair of the Cook Chill Group in Victoria, Mary travels the country to assist clients to meet the changing needs in foodservice management of their kitchen and service operations. Her depth of knowledge combined with her easy manner, have made Mary a popular presenter.


DALE ANDERSON
Dale’s 35 years in the Food Service Industry working in both cooking and managerial positions has given him a wealth of experience and expertise to progress into his new role as a well respected Consultant and Food Safety Auditor within Tasmania. Dale has a passion for his industry demonstrated through his long involvement in the Institute of Hospitality in Health Care. As Manager of the Foodservice Department at Launceston General Hospital, Dale is no stranger to challenges. He will take us behind he scenes with his presentation, highlighting the needs and wants of a large hospital, the challenges and the tight constraints they face each day.

TRACEY TASKER APD
As a Community Dietitian with the Community Nutrition Unit, DHHS, Tracey is based in Launceston. The Community Nutrition Unit works in partnership with other organisations and services to plan, implement and evaluate a variety of public health nutrition programs and strategies. For example, the CNU works with Child Health Association, School Canteen Association, Department of Education, local councils, food retailers and others. Tracey works in the areas of school canteens, children services (including child care), food and nutrition policy implementation and monitoring as well as resource development. The Community Nutrition Unit is a state wide service with offices in Hobart, Launceston, Devonport and Burnie.

BRAD FRENCH
Originally from Melbourne, Brad trained at William Angliss College, one of the foremost training centres for Chefs in Melbourne. He has worked at many prestigious venues including senior roles at Crown Melbourne, working alongside some of the best Chefs and responsible for large teams of chefs. Hear about some of these most exclusive events, where fine food is served.
